I thought GMT (+/-) is the ‘universal’ “center of the universe”. Or is this “Fahrenheid/Celcius”

When I read recipes from the US/North America (me myself being a ‘Metric’ guy, I always have difficulties using ‘cups, tea spoons, table spoons’ let alone LBS as opposed to the Kilo and gramms?
