You’re right, the mail field on the user domain page isn’t added to the mail addresses like for example the users or groups.
There’s already an open Feature request:

Option to add mail field addresses to the known mail addresses

Hi friends, in some environments the usernames are not the same as the mail addresses, for example the username is mn@domain.tld but the mail address is m.neuberger@domain.tld. We already have the possibility to edit the mail field to set another mail address for domain users but it’s not used in the mail app. When “Enforce sender/login match” is enabled, sending from m.neuberger@domain.tld isn’t allowed as the address is unknown.
