And welcome to the NethServer community!
NethServer 7.x will run on almost any Intel / AMD CPUs from almost the last 20 years!
A variant can also run on ARM based CPUs, but this is still in testing (but works!).
The newer NS8, still in Beta2 (RC coming soon…) is more flexible on this, it supports eg. Debian on ARM or Intel / AMD, but also most EL compatible…

NS7 or NS8 requires a x64 CPU. Beyond that, CPU requirements will be dictated by your workload, but it doesn’t seem that CPU is really a limiting factor with reasonably-modern hardware.
