How can I edit the Collabora container’s coolwsd.xml file in a way that will persist across upgrades? Specifically, I am trying to change the remote_font_config and
languagetool options.

It is not that simple. In NS8 this file does not persist across container upgrades.
It seems that an easy way to extend, modify, adjust config files for any module is difficult, where it should be as easy as edit a text file and restart the service?
