I installed Nextcloud on NS8. When I checked the settings in the Nextcloud web interface, the DNS server IP address was different from the one I use in my local network. How can I change the DNS server IP address that Nextcloud uses?

Each server has its own FQDN and are separate.
You might be looking for something like federation sharing.
Unless you are referring to High Availability scenarios.
