Since last update of nethserver-sogo some things are changed.
if you try to seek in inbox a special string the search box shows white font on white underground
in SOGo bug list this is known since April … and perhaps solution there.
now it is not possible to edit email signature - OK button is grayed - nothing to save …
Hope someone have an idea - I not found solutions

Oke now I get which button you mean, it’s a bit green-ish. However the OK-bottun works for me . EDIT it is mandatory to fill in a Full Name and Email (address):
I think something went wrong. Please have a look at your version, is it 5.1.1? You can find it at the settings.
For me the problem with the search field was fixed with the update. The signature works before and after the update, but like @mark_nl said, the OK button is light green, so with wrong colours at your display it could look grey, did you try to click it?
Which browser do you use? Do you have some settings at your client loke “high contrast”?

It’s not possible to change the signature of admin too.
I know this … but in my SOGo 5.1.1 I cannot see the letters in the search field. I only can see it if I mark this field.

can change the signature of the admin user,
can create a second identity for the admin user with an other signature (NOTE: filling in a Full Name and Email are mandatory)
the quick-search box is black on white
which account provider do you use?

Some years ago I had an analog problem … and now I can remember ! It is an HTML-Signature ! - To edit this signature first you have to change to source code
then edit source code -> then back to HTML code -> then OK -> then disk symbol
