The rootless containers (like Nextcloud) are stored in /home
Yes, at least put also /home to the nvme as the slow disks could be the reason for the timeout.
You could also try to increase the timeouts, see Continuing NS8 Nextcloud + other problems - #17 by stephdl
But I’d recommend to use fast disks to avoid configuration effort and it just works.
