I’m planning a Raid 1 set-up with two hard drives.
Do I need to install Nethserver on a third drive or will it install on to one of the two mirrored drives?

Just install from ISO…
It will then be installed on RAID 1, which means on the mirrored drives.
It really makes sense to have everything mirrored, not just the data partitions.
