I can see memory usage of my test VM, with few “applications” and just one user, to be ~2.9GB just standing there.
Is there a way to see individual RAM usage of services?
(would be a nice addition)

you can install statistics from softwarecenter to see some details about memory usage:
At least you can see how many ram is cahced and how many is really used.
More details give htop (or top) on CLI. But AFAIK there is no way to display ramusage per service in GUI.
