According to the Docs: Email: Custom-HELO,
the HELO can be changed from the new Server Manager.
yet, when I go into the new server manager I cannot find any setting that lets me set the HELO domain. Can anybody tell me if I have missed it or what’s going on?

It’s in the EMail Relay configuration details:
You may set the HELO host on CLI too:
config setprop postfix HeloHost <HOSTNAME>
